I'm looking forward to taking on next month's challenge: Maple-Pecan Medjool Date Rugelach. I have never made these pastries before but I've heard good things about them. I also happen to love Medjool dates :o)

I made them!! They don't look too picturesque but gosh they are good!! I wish I'd filled them all with the nut/maple/sugar. Instead I chose to use poppyseed filling and jam on a couple.
ReplyDeleteThe dough is a breeze to come together and very easy to work with, just make sure to chill it long enough.
Anyone made them yet? Are yours also looking a little bleak?
I have not made them yet, but will this week - I have the dates in my supermarket list ... so its on!
ReplyDeleteGood to hear that they're tasty. Thanks for the tip on refrigerating the dough long enough. I already have a big box of Medjool dates at home, however, I don't think I will get to them during the week. So I will be baking them this weekend instead.

ReplyDeletePictures are always good! I never forget the first time I saw someone "lightly" flour their work surface in order to roll cookie dough..... Gone were my fears of rolling dough, I suddenly understood why my dough always stuck. :-D One can flour too "lightly"

WOw! It looks like I did it the right way then! My dough looked exactly like that and the finished rugelach look the same! (So I guess that's the way the are supposed to look after all! Happy dance!)

I'm getting ready to start on these, subbing in dark corn syrup for maple syrup- I don't have anything but sugar free maple syrup and I KNOW that if I don't do these right now, I won't get to them until I'm in a super hurry later on! ReplyDeleteThese are so good! I cut my first circle incorrectly (into eight portions rather than twelve), but no complaints about bigger cookies.
ReplyDelete@Margot: that is too funny. I made a test batch with one circle last night and I too cut the dough into 8 instead of 12 portions, ha ha. These are soooo good. You definitely can't eat just one! Will be baking the rest today.
