  11. An update. I served these first as suggested - frozen. Then I thought - since the little cookie top is crunchy - so I reheated the puffs before filling. I cut them and baked them just until crunchy. I had scooped the ice cream into balls and kept them in the freezer, then put them into the toasty puffs and drizzled warm caramel over -absolutely perfect. Rave reviews all around.
