I'm sorry I misunderstood your original request. Here is the link to my profiteroles post. I hope everyone enjoys it and I love reading all the comments.
After reading your email again, here is my link: http://lolasartisticendeavors.com/ABCPumpkinIceCreamProfiteroleswithCaramelSauce. It is not quite as you requested. I will do better next month. I loved this recipe and thrilled that the little puffs did their think with a "hat" on.
Here's mine! They needed my laptop yesterday and asked if they could close everything... I said yes... post gone! I am so sorry I'm a day late, but it's there now. We all loved these!
An update. I served these first as suggested - frozen. Then I thought - since the little cookie top is crunchy - so I reheated the puffs before filling. I cut them and baked them just until crunchy. I had scooped the ice cream into balls and kept them in the freezer, then put them into the toasty puffs and drizzled warm caramel over -absolutely perfect. Rave reviews all around.
I was very happy with the rugelach. I have wanted to try them for a long time but never got around to it. Now that I know how easy they are and how good, I'll be making them often
I loved these. They catered to my love of all things French and also reminded me of my mom's cream puffs
