I just made this today. No problems, except I found braiding a little difficult.
ReplyDeleteI made the dough yesterday. After a couple rise cycles (I did extra rise cycles because I was busy so I punched it down and let it rise again), I weighed three equal parts and braided the loaf. Into the fridge it went. Then I remembered a trick from Alton Brown: in the morning, take it out of the fridge, stick in the oven (turned OFF) and pour boiling water in a pan underneath the bread. Let the bread finish its final rise for about 30-35 min. Take it out of the oven and start preheating the oven. Then bake! It looks wonderful. It's still cooling right now so I haven't cut into it yet. I used poppy seeds instead of sesame seeds.
