January 2013: Panettone Muffins

One of our new ABC members, FatimaZahra, doesn't have a blog, and so I offered to post pictures of her Panettone Muffins on the ABC blog. Great job, FatimaZahra!

  1. Hanaa, im very excited to get back in to the swing of baking! I just had a ? though.... fiori di sicilia, is that something I can purchase in a store or would I need to order it from KA? Iv never used it so I was curious. Sorry to rest of ladies I was MIA, I started a new job and just didnt have the time to bake much this fall but after Christmas im so ready! :)

    1. Great to have you back, Becca. You can either order it from KAF or just substitute good vanilla instead. Since Fiori di Sicilia is supposed to have a citrus-y aroma, I'm thinking of using a combination of lemon oil/extract and orange oil/extract. I hope that helps :o)

  3. How fun stumbling across your site. I recently made the Panettone Muffins from KAF and really enjoyed them. I loved how light and fluffy they were. They kept fresh for a couple days afterward, so we didn't have to hurry and eat them.

  4. It was really interesting to see how differently all the various batches came out. Most were fairly small and very smooth on top, but then other got rather craggy. The inside texture looked the same for most, although one person (can't remember who) achieved that coveted fine texture muffins are "supposed" to have (that results from barely mixed at all.) I wondered why the recipe didn't caution to mix "only until blended", but personally I don't care about a few large air pockets. Okay, onward ho!
